Ingredients
- 1¼ pounds ripe banana, sliced on the diagonal
- 1 cup sugar
- 1 cup coconut milk
- ½ teaspoon vanilla
- 7 slices white bread
- 2 Tablespoons melted butter
Procedure
1. Preheat
oven to 350°F.
2. In
a mixing bowl, sprinkle ½ cup of the sugar over the sliced bananas. Set aside.
3. In
a saucepan, cook ½ cup of the sugar in the coconut milk until dissolved; then
stir in the vanilla.
4. Soak
the bread in this sweetened coconut milk.

5. Grease
a 12-square-inch nonstick baking pan and arrange ⅓ of the bananas on the
bottom.
6. Cover
with half of the soaked bread, ⅓ more bananas, another layer of bread, and then
finish with bananas. Drizzle the melted butter on top.
7. Cover
with foil and bake for one hour. Allow to stand for 12 hours before cutting.
8. Serve
with vanilla ice cream.
