Pork in Lettuce Leaf Cups

  • Ingredients
 1 tablespoon of vegetable oil
1 finely chopped spring onion
2 teaspoons of minced garlic
1 finely chopped red chilli
250 grams of minced pork (low fat)
1 teaspoon of Chinese five spice powder
220 gram jar of water chestnuts chopped fine
1 tablespoon of fish sauce
2 tablespoons of soy sauce
1 tablespoon of honey
75 grams of bean shoots
8 lettuce cups
Coriander leaves to garnish
  • Directions
Mix all the ingredients with the exception of the lettuce, bean sprouts and the oil in a bowl. In a hot saucepan add the oil and then in batches add the meat mixture.
During cooking mix well so all the pork is broken down to a fine mince. Once cooked blend in the bean shoots.
Separate the lettuce leaves and scoop spoonfuls of cooked mince into lettuce bowl and serve with a little coriander to garnish.
